opposite the hallowed premiers crus Vaillons and Montmains. A
gorgeous lemon-gold color in the glass, Laffay’s Chablis instantly
transports you to the fossilized Kimmeridgean limestone slopes of
Chablis proper. Saline sea breeze and crushed oyster shell aromas
lead to a juicy lemon expression on the palate followed by complex
suggestions of raw hazelnuts and salty minerals. Hints of key lime
zest, gunflint, smoke and dusty oyster shell minerals mark the
wine’s long textbook Chablis finish. This is le vrai Chablis,
folks, from a sensational Chablis vintage. It drinks incredibly
well now, but has the poise and stuffing for a long evolution in
your cool cellar. Enjoy now and over the coming seven years with
oysters on the half-shell, oven roasted mussels, scallops, crab,
freshwater fish, and mild soft cheeses such as camembert and brie.
