The rarest of the rare, this traditional "Rancio" wine from the French foothills of the Pyrenees is aged in used oak barrels for several years as oxygen does it's work 'elevating' the flavor and texture of the wine. Unusually for the style, this example is a single vintage wine. Originally intended to be a white dessert wine from the native Maccabeo grape, the punishingly hot 2003 summer essentially cooked the wine after fermentation, yielding a rich, nutty wine with incredible power and a light smoky note. After 10 years in barrel, all the sugar has cooked off leaving the wine entirely dry, though there's no shortage of rich caramel flavors woven in with everything else. A true tour de force, and unlike almost any other wine, this is a beautiful pairing with rich meaty appetizers, nutty charcouterie and cheese courses, or as a mixer in exotic cocktails.
