Drouhin-Vaudon’s biodynamic viticulture and masterful winemaking imbue its Chablis portfolio with authentic terroir expressions and impressive purity of fruit. Brilliant lemon-gold in the glass, the 2017 Réserve opens with brilliant limestone and iodine-infused Chablis notes of lemon curd, pear skin, and flint. Brisk, intense, and energetic on the palate, suggestions of salty citrus fruit and acacia blossom fuse with undercurrents of flinty limestone soil, buttery lemon curd, and quinine. Further waves of saline minerals segue the wine to its long, full citrus and oyster shell-driven finish. Classically structured, intense, and bracingly acidic, Drouhin-Vaudon’s 2017 Réserve drinks well young, but will easily reward five to ten years’ patience in your cool cellar. Pair with all things seafood, vegetable soufflés, potatoes au gratin, poultry, and pork. Limited.
