This exceptional grower champagne is entirely naturally farmed and fermented using only indigenous yeast. The Solera refers to the Sherry-like process Sebastien Mouzon used to blend vintages. The result is a set of delicate aromas that hint very lightly at the nutty notes of a Manzanilla Sherry, alongside intense apple, limestone, and lemon aromas. The palate is profoundly smooth and fine textured, and the finish is a wave of acidity with pure limestone terroir notes.
