This very rare varient of traditional Tokaji has the customary element of late harvest botrytis, but the wine is fermented entirely dry, and the wine is left in underfilled cask, where a flor-like yeast develops over the surface of the wine, similar to those found in Sherry and in the Vin Jaune of Jura. The result is a massively complex wine unlike any other. Dried apricot and keen citrus elements are balanced against musty botrytis, light leasty, and cinnamon spice flavors. As dazzling as it is unique, this wine was in the 19th century a favorite in the Polish court; Szamorodni is a Polish word meaning "as it grew", a reference to the picking style, where whole bunches are picked with a mixture of both botrytis-infected berries and unafflicted fruit.
