Matt Kramer, maestro of all things Italian, once wrote, “If Mozart made Chianti, it would be Paolina.” With each new vintage Savignola Paolina’s impressive Tuscan portfolio of gains refinement, elegance and complexity. From the charming 2014 Tuscan vintage, the estate’s flagship Chianti Classico – a blend of Sangiovese (85%), Colorino, and Malvasia Nera – casts a lovely rusty cherry color from the bowl, followed by classic Chianti aromas of wild cherries, sandalwood, leather, vanilla, and game. On the palate, Paolina’s Classico presents vintage 2014’s up-front approachability with fine tannins framing a delicate kernel of red cherry and red currant fruit. Hints of leather, tar, button mushrooms, and sweet tobacco emerge mid-palate and segue the wine to its long, generous finish that begs to be paired with food. Delicious now, the wine has the poise and stuffing to ensure a long and promising evolution in your cool cellar. Enjoy now or over the next decade with hearty pasta dishes, grilled Porterhouse steaks, pizza, roast pork, rich bean stews, eggplant preparations, and zucchini frittatas.
